Pour-over is the simplest way to taste what makes a specialty coffee special. All you need is a dripper, a paper filter, a kettle and fifteen grams of freshly ground coffee.
The recipe
- 15 g of coffee, ground like coarse sand
- 250 ml of water just off the boil, around 93 degrees
- A 30-second bloom with 40 ml of water
- Then pour slowly in circles until the scale reads 250
Taste and adjust
If the cup tastes sour, grind a little finer. If it tastes bitter, grind a little coarser. Start with our Ethiopia Yirgacheffe: it rewards a careful pour with jasmine and lemon.
